I add milk, smart balance light spread, some salt and garlic powder. Sometimes I even add a little bit of cream cheese, shredded cheese or sour cream. Guest guest Posted February 14, 2010 Report Share Posted February 14, 2010 I cut the potatoes into small chunks with the skins on, and with a celery root, I will also roast up some parsnip and turnip and sometimes some cauliflower, and garlic, then I puree the roasted veggies and then mash them in with the potatoes. I will also add some tofutti cream cheese. Not only does this have good flavor, it is a way to sneak veggies into someone who does not like to eat them. In a message dated 2/14/2010 11:51:18 P.M. Guest guest Posted February 15, 2010 Report Share Posted February 15, 2010 I have to agree with you regarding loving lumps in my potatoes - to me that's the only way to eat them. I usually make rustic " smashed " potatoes -- potatoes, skins and all, mashed lightly with many lumps left in for a great texture. There's just something about totally smooth potatoes that I really dislike -- I guess I like to " eat " my food instead of just swallow it.
