It really does a great job of making them light, fluffy and smooth. I add milk, smart balance light spread, some salt and garlic powder. Guest guest Posted February 15, 2010 Report Share Posted February 15, 2010 I have got to weigh in on this one. This really depends on the mood I'm in, rustic or super creamy. If I'm in a rustic mood, then they are lumpy, skin on, usually red potatoes with butter and sour cream. If I'm in a creamy mood, I mash them by hand with a wire masher made in an S pattern because this pattern works the best for me and they don't get too much like paste, which potatoes can do very quickly. I add butter, milk, sour cream, or mayo to make them super creamy. I love them with pepper or hot sauce! The hot sauce turns them a pinkish orange, but it is really good, especially if you like hot sauce, plus hot sauce is really good for you unless you have a sensitive stomach. I love, love my skin on potatoes, so I usually have them lumpy just because I'm a rustic kind of girl. Great conversation ya'll. My family would never eat mashed potatoes with lumps! Guest guest Posted February 15, 2010 Report Share Posted February 15, 2010 I like them both ways but remember.....a few lumps prove that they are REAL mashed potatoes not boxed potato flakes. When I was head chef and kitchen manager at The Barkley House Restaurant years ago, I used to make the mashed potatoes for the lunch special (when the lunch special included mashed potatoes). I didn't have to peel the potatoes but I put them on to cook, had the helpers drain them into huge colanders, and then I personally put them into a big old Hobart mixer, added extra ingredients and mashed them. I don't think even that big old Hobart got every single lump out but it did a good job. I was told once that my mashed potatoes were so good by a lady that she wanted to just " bury my face in them " .....I thought that was a funny compliment but a good one too.
