Guest guest Posted February 16, 2010 Report Share Posted February 16, 2010 This is Judy's recipe - I made just the sauce tonight, and put it over Tofu Shirataki noodles. It was wonderful! I used lime juice instead of lemon, and only wish I had a little cilantro for garnish (that would be even more yummy!) Thanks, Judy! Audrey Pasta with Spicy Peanut Sauce 16 oz spaghetti noodles, break up before boiling. 3 yellow squash, diced up 1 bell pepper, red or green, diced up 4 green onions, sliced up 1/2 onion diced 6 garlic cloves, minced 2 T. Oil 1/2 c. creamy or crunchy peanut butter 1/2 c. tamari or soy sauce 1 T. sugar 6 T. lemon juice Red Pepper flakes(optional) Cook noodles and drain and rinse. While noodles are boiling, put diced up veggies in a large bowl and cook covered in the microwave for 5 minutes. In a skillet, heat oil to med heat and add minced garlic. Cook one minute and add the peanut butter, tamari, lemon juice, sugar and lemon juice . Stir until well blended. Add the steamed veggies and stir to coat. Stir in the the cooked noodles. Oh I know fresh cilantro and lime juice would be great with this. Thanks for posting your review.
