I know that, from experience, eating along the way isn't very vegetarian friendly OR very wallet friendly. So, we are looking for some easy meal ideas that we don't have to cook and can just throw together without removing a lot of our needed nutrients. Guest guest Posted February 17, 2010 Report Share Posted February 17, 2010 Bean salads work well, very nutritious. Also, sandwiches can be assembled easily from cooler ingredients. If you want to take the sandwiches made, peanut butter and jam/jelly or some version of that travels pretty well. We also like to take fresh fruit on car trips, and usually i make a batch of the nut meringue cookies that i posted here (almond, hazelnut, pistachio or pecan). Sometimes we also purchase the Odwalla protein drinks. Another nice choice are mixed nuts, Trader joes makes some nice ones honey roasted. And, you may not like this idea at all but we did this years ago a few times and it did work. Ok....first, years ago, years ago I read about this way of cooking in a book I have. I think that Dian Thomas (she wrote a book called " Roughing It Easy " .....she used to be on the Gary Collins Show a lot with great camping ideas....has written about doing this. One thing she talked about was " manifold " cooking....where you can cook foods that have been double or triple wrapped in heavy duty foil on the manifold of a car and remembering that made me think of this idea. What if you took some cans of vegetarian refried beans.....cheese in your cooler (if you eat cheese), picante sauce, and tortillas......you could take the beans, spread them on the tortillas, add the cheese, wrap them in the foil and put them on the manifold of the car......gee, I guess cars still have manifolds in them?.....and it would probably not take very many miles and you would have hot burritos. Or you could wrap up Morning Star Farms vegetarian patties or other vegetarian " hot dogs " , heating them on the manifold, just taking buns and condiments with you. I did a Google search and did find several sites....I searched " cooking on the manifold " .
