If you are Lacto-ovo, bring hard boiled eggs or stop at grocery stores with a deli department--get eggs, cheeses, and dips. You can also get salsa and cheese sauce to eat with chips (not a low salt healthy alternative, but better than nothing). Tortillas (check to make sure no lard) can be wrapped around refried beans from the can with a little salsa (from the jar) to make safe burritos. I usually bring a hot pot and heat up some vegetables for a dinner if we are going to be staying a long time in a hotel type setting. You can make mac and cheese in a hot pot and add 10 ounces of frozen peas at the end to make a nice complete protein meal. Canned stuffed grape leaves from an ethnic market or largish grocery store. Depends where you are going to be travelling, of course. You can often find canned hummus as well, to put on crackers or pita bread. You can heat up vegetarian chili in a hot pot if you don't have gas issues with eating beans. Subway has a veggie sub. If you are going to eat out at all, Fazzoli's has pasta with red sauce dishes that might be acceptable; many pizza places will make a plain cheese pizza for you, and if you go to Little Caesar's, you can get a multiple veggie pizza and tell them to hold the cheese, if you are not able to eat cheese products. When in doubt, travelling with little people, peanut butter and jelly on good bread, fresh fruit, and juice or milk to go with some home baked cookies, usually is acceptable. Have fun!
