I've been experimenting with making peanut sauce for a couple years now, after

eating at a wonderful Thai Restaurant in Ca.

After taking bits and pieces and ideas from some of you folks, I've come up with

a combination of ingredients that I really enjoy.

So thanks to all of you for your ideas, and if you love peanut sauce like I do ,

you might want to try this one.

Peanut Sauce

1 cup water

1/3 cup Bragg's Aminos

2 Tabs.red wine vinegar

3 Tabs.brown sugar (I sometimes use Agave Nectar)

2 teas.grated Ginger Root

4-5 cloves fresh garlic -mashed

1/4 cup grated coconut

1-2 teas. chili paste(I used Dynasty Thai chili garlic paste.)

1 cup peanut butter(I used organic creamy style)

Simmer all ingredients except for the peanut butter, for apx.20 min.

Slowly stir in peanut butter. Serve hot or cold.

Like most sauces this one tastes great when first made, but tastier after

refrigerated over night so the flavors blend.

I don't reheat the sauce, but instead spoon it over hot cooked noodles or other

pastas.

I love peanut sauce! This recipe looks wonderful. As soon as the PIFF is

over (that's our Portland, OR international film festival,) I'm going to

whip up a batch.

A Vietnamese parent at a school where I used to teach showed us how to

make salad rolls in rice paper. I'm not very good at rolling them, but

misshapen as they are they taste wonderful. It's a great meal on a hot

summer day. This sauce will be perfect for those.

Cheers,

Trish
