When i decided to become a vegetarian, one of the easiest things for me to do was make substitutions in recipes that I knew I already liked. I always thought baked tofu was a great substitution for chicken in veggie stir fries and those types of dishes. Also,if I could give you a bit of my experience, I would say don't eat gluten... Or that stuff they call seitan... it is pure gluten- when I ate it I reacted horribly. They should call it satan!! Anyway, the discussions in here are great and if you find any great recipes that you love, pass them along to me too!
