This morning it started with a green chili... 1 green chili deseeded and sliced 1 shallot (tiny onion) 1 roasted garlic clove 1 small tomato 1/4 tsp shredded tumeric root 1/2 cup cooked white rice cumin, chili powder, salt & pepper to taste 1 egg beaten Coat small (cast iron) fry pan with a little olive oil and let warm, put in chili and shallot and let cook over low/med heat until soft. Add garlic and smash it up in the pan to mix in then add cut tomato and tumeric. Cover and let simmer till soft, ad rice. Beat egg with spices and make a space in the middle of the pan to cook it in and add. Cook up the egg then fold in the sides till egg is done and yum!
