Good, though -- I liked the taste of these, but think I will add some cayenne pepper next time. My mom happened to come by about the time I was taking the first ones out of the pan (and caused me to burn the second batch but oh well!) She tried them and liked them, too -- this is the woman who made fun of me big-time for going vegetarian! Problem: the darn things fell apart! Did I not knead long enough, maybe? The texture was kind of soft and I remember reading that they are supposed to be more chewy. Does baking them help with this? (I fried them) Thanks! When I bring them to parties, I cut each cutlet further into four pieces before baking so that they're chickpea nuggets, and then I bring three dipping sauces with me: Chipotle raspberry sauce, a curry dip, and a vegan ranch dip. Someone who loved them when I brought to a party made them and fried them (she assumed I friend them) and didn't like them, so the cooking process can really make a difference. Guest guest Posted February 20, 2010 Report Share Posted February 20, 2010 I thought the recipe said to knead them for 3 minutes until gluten strings form, but it never took me three minutes for that to happen. When I saw the strings, I stopped kneading. Took maybe two minutes for that to happen. I also live at 5,200 feet, and maybe the elevation makes a difference.
