I followed the recipe and did end up kneading them for the 6 min. I kneaded them right in the bowl...I kinda found that interesting as I watched the gluten do its work! I fried them, but I will bake them from now on...I liked the flavor but did not like the consistency and that was what my dh mentioned also. Looks like, from the other comments, that baking will remedy that! I made the mustard sauce from the book and served that on top of the cutlets...that was yummo! I am finding sauces the key to upping the flavor on a lot of recipes. Keep posting comments as you try other recipes! Enjoy the day!
