Guest guest Posted February 21, 2010 Report Share Posted February 21, 2010 Lime Carrots 1 lb. carrots, peeled and thinly sliced 1/4 cup cilantro or parsley, chopped 1 tbsp. lime juice 1/2 tsp. lime zest 2 tsps. unsalted butter Place carrots in a steamer basket over boiling water. Cover saucepan and steam 7-8 minutes or until carrots are tender. Transfer carrots to a bowl. Toss with remaining ingredients and pepper to taste. Yields 4 servings.
