Guest guest Posted February 28, 2010 Report Share Posted February 28, 2010 Robin just posted a peanut sauce recipe yesterday or today that looks good -- I have not tried that one yet. The one I used recently was Judy's - I made only the sauce (I put it over tofu and noodles) and used lime juice instead of lemon. It was great! If you like cilantro, add some as garnish with some lime juice, it makes an interesting combination of flavors. Audrey Pasta with Spicy Peanut Sauce 16 oz spaghetti noodles, break up before boiling. 3 yellow squash, diced up 1 bell pepper, red or green, diced up 4 green onions, sliced up 1/2 onion diced 6 garlic cloves, minced 2 T. Oil 1/2 c. creamy or crunchy peanut butter 1/2 c. tamari or soy sauce 1 T. sugar 6 T. lemon juice Red Pepper flakes(optional) Cook noodles and drain and rinse. While noodles are boiling, put diced up veggies in a large bowl and cook covered in the microwave for 5 minutes. In a skillet, heat oil to med heat and add minced garlic. Cook one minute and add the peanut butter, tamari, lemon juice, sugar and lemon juice . Stir until well blended. Add the steamed veggies and stir to coat. Stir in the the cooked noodles.
