I'm Betty from Malaysia, 27 years old, and I recently got married in January. DH and I are in the process of making the transition to become full vegetarians. It hasn't been easy because our families don't really support us becoming vegetarians, and everytime we eat with them, there's always a lot of meat dishes at the table. Added to that problem is that I had developed quite a taste for meat, and haven't been disciplined enough to resist when the dishes are right in front of me. We're currently living in my parents' house, so we don't have full control in the kitchen, but every once in a while, I'm able to cook and when I do, I try to cook delicious vegetarian dishes so that my family will consider eating less meat, but to no avail so far. I'll be honest and say that I'm only just a beginner at cooking, so it's probably my fault they don't like vegetarian dishes! LOL! We will be moving to our own place in a few months though, so I'm looking forward to when we can have full control in our kitchen, and I'm hoping that I'll be a better cook by then and have more delicious vegetarian recipes to share! =) I'm really happy to be here and I'm looking forward to learning and sharing more with the group! Here's the most recent vegetarian recipe I tried. It has diary products in it, so I hope even if not all of you can use it, the ones who can will like it. Vegetable & Corn Chowder (serves 4) Ingredients: 1 tablespoon vegetable oil 1 red onion, diced 1 red bell pepper, diced 3 garlic cloves, crushed 1 large potato, diced 2 tablespoons all-purpose flour 2 1/2 cups milk 1 1/4 cups vegetable stock 1 3/4 oz broccoli florets 3 cups canned corn, drained 3/4 cup grated vegetarian Cheddar cheese salt and pepper 1 tablespoon chopped fresh cilantro, to garnish (Note: I had to prepare this at short notice, and I didn't have all the ingredients so I left out some; the red pepper and potato, and substituted some; cauliflower instead of broccoli. I also added maraconi to make it a fuller meal.) 1. Heat the oil in a large saucepan and saute the onion, bell pepper, garlic, and potato for 2-3 minutes, stirring. 2. Stir in the flour and cook for 30 seconds. Stir in the milk and stock. 3. Add the broccoli florets and corn. Bring the mixture to a boil, stirring, then reduce the heat and simmer for about 20 minutes, or until vegetables are tender. 4. Stir in 1/2 cup of the grated cheese until it melts. 5. Season and spoon the chowder into a warm soup tureen. Garnish with the remaining cheese and the cilantro and serve. That's it. I think it's a simple and easy recipe, and it was delicious!
