I put rice dishes on top of my baked potato, beans in spaghetti sauce on top of pasta, noodles on top of rice and so on. I'm the carb queen. Not a diabetic in the family history on either side so I don't really worry about it, if it tastes good I eat it. Have my sugar checked once a year. My diet consists overwhelmingly of complex carbohydrates, yet I'm the only one who's not diabetic. I'm convinced it's because of my diet. It is just harder to be vegetarian when you are diabetic. What you may not realize is that there are millions of diabetics today who didn't have any diabetes in their family history either but they ended up with diabetes anyway. I miss pastas and potatoes the most......but, I have learned to eat very, very small portions or none at all. I could have something a whole lot worse so I consider myself blessed. I, for instance was almost 60 when I became diabetic.....my late, former father-in-law was 86....he lived to be 95. My doctor told me that I was lucky to be diagnosed so late comparatively speaking. I know quite a few people in our community who were diagnosed in their mid 30's. I have always been very careful in what I ate and my doctor says that is the reason mine was so late on-set. Guest guest Posted March 2, 2010 Report Share Posted March 2, 2010 I'm almost 55 years old, and my fasting sugar levels had reached the prediabetic stage. That was the sole reason I switched to a vegan diet. After switching to a vegan diet, my fasting blood sugar dropped to 80 and has since always been in the 80 to 90 range. Because of my family history and the fact that both of my sisters have become diabetic, my doctor and I keep a steady eye on it. Also, just as an aside, after switching to a vegan diet, my blood pressure also dropped from around 146/105 to 121/76, probably because once I switched to a vegan diet, I stopped eating processed foods, and so my salt consumption plummeted.
