[veg_grp] Potato Cakes

 

 

 

Potato Cakes

 

2 cups leftover

mashed potatoes

2 Tbsps butter

2 Tbsps milk

small onion, finely diced

1 egg,

beaten

salt & freshly ground pepper, to taste

3/4 cup bread crumbs

 

Combine the mashed potatoes, butter, milk and

egg. Blend well.

Add the salt, pepper, parmesan cheese

Refrigerate about 3 hours.

 

Shape into patties and dredge

in crumbs. Fry 2 minutes on each side in oil.

MMMmmm...I love potato cakes made from leftover mashers!

My mom used to make them all the time when I was growing up..

The first time I had 'real' potato pancakes I was shocked! :) These arn't potato

cakes, they're not made from mashed potatoes!!! lol

Thanks for bringing back an old memory!

Potato Cakes

 

2 cupa mashed potatoes

1 egg white, slightly beaten

2 tbsps. chopped

onion

2 tbsps. all purpose flour

1/8 tsp. salt

pepper to taste

1

tsp. oil

 

In a medium size bowl, combine potatoes, egg white, onion, flour, salt and

pepper. Meanwhile, heat oil in a large skillet over medium high heat. When hot,

put about 2 tablespoons potato mixture for each cake into skillet. Cook until

well browned, then turn with a spatula and cook other side until brown. Continue

making takes, keeping first ones warm. Yields 6 servings.
