Guest guest Posted March 3, 2010 Report Share Posted March 3, 2010 Thank you for letting me rejoin! I'm not fully vegetarian yet. I do some meals that are but hubby has fits. Also I am dealing with his surgeries and being diabetic, not to mention a stroke. I have a hard time making sure I'm using enough protein for his healing with my veg cooking. I am using TVP from the health store but know I have a long ways to go yet. I am able to get some help from his nutritionist but he is difficult there as he doesn't like being told what he should do and can't have. It's very difficult situation. As a new member, I'm suppose to post a recipe. I'll try to type one up tomorrow or the next day. One thing I need to know first is if it's ok to post a recipe that uses eggs, cheese or milk. I know some vegetarians eat them and vegans don't. But I don't know if it's ok to post recipes w/eggs/milk/cheese or not. I really like this group a lot. One can be a beginner and ask questions. You don't have to post a recipe but if you do it's fine to post one with cheese and eggs or a vegan one with no eggs or dairy. I know how hard it is to deal with a stubborn sick person. My father-in-law had a stroke and was in denial. He wouldn't eat np lard flour tortillas, he said they didn't taste good. I had my MIL said a lard laden empty wrap and put no lard tortillas in it. Guess what? It worked, he didn't know the difference. If your husband is eating egg whites you can whip them with a dash of turmeric to add the yellow color. Go to Amazon and order some hemp nut seeds, they are full of protein and the omegas, they taste delicious and you can sprinkle them on his salad, sandwich, baked potato, rice, etc. Same with ground flaxseed. You should both be eating the grain quinoa, it's low in carbs and has lots of protein. See if you can find the tofu noodles called Shirataki, you can order them online and health foods stores as well as Asian markets have them, they are refrigerated and the packet has something like 30 calories, great for diabetics. In the sauce and dressing recipe folder I have a vegan ranch dressing you will love, make it up. There's a savory sauce too. All the non-veg guests we serve them to love them and ask for the recipes. Friday I am going for oral surgery so I can eat to much. Had protein and stuff in it and was filling. Used it in my thermos for lunch.lol You could replace the milk with vanilla soy milk maybe. I'm also diabetic so have to use substitute sugar or agave honey. Have no idea how egg replacer would work in eggnog.lol Never tried it for that, just use it for recipes. You will loose weight, how much depends on how long you have to eat this way. Made bean soup and put it through the blender, actually did that with a lot of soups.lol Found out I just loved butternut squash soup. I have a health master now, just got it and made the butternut apple soup last night and it was to die for and so was my banana peanut butter smoothie. Do put some peanut butter in your smoothies for protein. I've added the items you listed to my list so when I am near the health food store I can see if they're open to get them. The flax seed we have. The quinoa they were out of last stop. I was able to get the barley and steel cut oats I wanted though! I also love the cashew butter as I can use the oil that separates off in stir fried veggies.
