Guest guest Posted March 4, 2010 Report Share Posted March 4, 2010 Mediterranean Lentil Soup 1 cup red Lentils 2 tsps salt 1 pinch of saffron or turmeric 1/2 cup of chopped onion 2 tablespoons olive oil 1 tsp of cumin 1/2 cup of very thin noodles 1 lemon If you have Greek seasonig toss a little in the pot In a 4qt pot, add 5 cups of water, add salt, olive oil, saffron, chopped onions and the lentils. Set flame to high until boiling then reduce to medium-low heat. After about 20 min or so, you should see the lentil starting to get mushy. Once lentils are no longer hard you then add the cumin and noodles. Continue to cook for 5 minutes until noodles are done. Add lemon to soup for extra flavor.
