He is in his mid-80's and has lost so much weight now, he is down to about 120 pounds. He is generally really healthy. My husband finally talked him into seeing a chiropractor, where he found out his hip was displaced. Now that he has gotten that taken care of, I want to get some weight on him. I am looking for a high calorie, extremely healthy " treat " . Muffins that I could freeze would be great so that I can bake him a big batch. I prefer something to bake (I don't like to cook that much). Also, he eats a very limited diet only because he is old and set in his ways, so I can't passs any recipes on to him. I just want something I can make for him. I am so worried that he will continue to lose weight. I need to " fatten " him up!! Thanks in advance. I appreciate all the help! It's hard to pack weight on an elderly vegan who doesn't have much of an appetite. My Mom was always vegan and she ate smaller meals as she got older, I doubt she ever had an extra 5 lbs on her, she had no sweet tooth either. We have some vegan cookie recipes and he could freeze those in baggies and pull them out when he wanted to eat a few. When I log in I can try to find some and repost for you. What seems to work pretty well is to make nutritious snacks available at all times. Eating small meals often seems to work better for folks that cannot eat large portions, and it helps with weight gain. I leave bowls of mixed nuts around, make cookies often, or coffee cakes and breads. There are many types of vegan cookies, the nut based ones are pretty nutritious. My favorites do have egg whites, so not vegan, but I am sure you can find vegan ones. I have vegan zucchini muffins somewhere in the files and there are other good versions too (mine do not have any oil, but in this case you would want some oil). Another thing that I eat very often is a vegan version of Donna's fig bread. I can post/repost those if you need it, just let me know. The small meal/snack idea works pretty well but you have to find out what snacks he is amenable too. Not everybody likes nuts, but they sure work to add calories to a person's intake. Guest guest Posted March 5, 2010 Report Share Posted March 5, 2010 This is intended for small children; it is packed with calories and nutrition: Dad's Sneaky Pudding Makes 2 servings This recipe was created by Earthsave International' s Chair of the Board ofs, Louisville Lawyer and chef, John Borders. • 1 1/2 cups frozen strawberries • 1 banana • 1-2 tsp. carob or cocoa powder • 2 tsp. flaxseed oil • 3-5 Tbsp. nut butter (cashew or almond) • 2-3 Tbsp. orange juice or other healthy juice such as carrot juice • 2 Tbsp. fortified soymilk • 1/8-1/4 avocado Place all the ingredients in a food processor or blender. (I've never tried freezing them, though.) Does he like chocolates? I used Frangelico [sp?] for the liquid and rolled them in chopped, toasted hazelnuts. They're supposed to freeze well, and they're easy and fun to make. Donna's Bohemian cookies and the recipe Christie posted for almond biscuits should both be in the files. They're both fantastic! And, if he likes granola, Donna's is out of this world and would be easy to store and nibble on. (Everyone I've made it for has talked about it being impossible to stay away from...) I know you said baking, but I keep wondering about guacamole because of the healthy fat and quickness/easiness. Hope this helps! Guest guest Posted March 5, 2010 Report Share Posted March 5, 2010 Oh yes guacamole is a great idea, make sure to add some lemon and put the seed in the center to help keep it green. How about a nut loaf, he could use it for sandwiches too. I have a large vegan friend and she eats tons of nuts, chips, guacamole and makes salad dressings with oil. Fried rice is so easy to make and delicious and you can add plenty of veggies to it which he needs. It's not hard to make vegan enchiladas and they freeze in separate small containers. Will he eat baked tofu? You can slice the extra firm, dip in soy milk and then season some breadcrumbs and bake. Or just marinade it in teriyaki sauce and bake, it tastes great in a sandwich or with the friend rice and it's so easy to make. I liked the sound of Dad's sneaky pudding, it sounded so good I will make it for us as well (but will have to limit myself from eating too much as I need to lose weight!)!
