Guest guest Posted March 6, 2010 Report Share Posted March 6, 2010 Sauteed Swiss Chard With Garlic and Pecorino 3 tablespoons extra-virgin olive oil 2 cloves garlic, smashed 1 pound Swiss chard, thick stems removed 1/2 teaspoon kosher salt freshly ground pepper juice of 1 lemon, about 2 tablespoons 1/4 cup freshly grated pecorino Romano Heat the oil in a large skillet over medium heat. Add garlic; cook until light brown, about 3 minutes. Raise heat to high; add Swiss chard. Cook, stirring, until wilted, about 2 minutes. Season with salt. Cook 1 minute. Take pan off heat; season with pepper to taste and add lemon juice. Sprinkle with cheese. Serve hot or at room temperature. Makes 4 servings.
