almond cookies - vegan - Panellets

I should have posted these a long time ago, they are so good! Make the balls

small, less then an inch diameter.

 

Panellets

 

1 medium yam

sweet potato or regular potato

1 cup sugar – less if using yam or sweet potato - more if you have a sweet tooth

2 cups blanched ground almonds - made into fine meal

1 tsp vanilla

2 tsp lemon zest

Pine nuts or chestnuts for coating. (about 1 cup).

 

Boil or bake yam and mash, should make about 1 cup. Mix all ingredients except

nuts for coating. Let rest 30 minutes, make small balls and coat with nuts.

Place in oiled baking sheet 1 inch apart and bake for 15 minutes at 350F or

until they start to brown.

 

Comment: Yams give an orange color. Sweet potato is better for the more

traditional cream color.

 

Variations: add cocoa to the mix for chocolate variation - use hazelnut meal for

part of the almond.

 

These are traditional Catalan cookies served for all saints day. Egg yolk or

egg whites are used to coat the outer pine nuts, I skip that and they are fine.
