Guest guest Posted March 7, 2010 Report Share Posted March 7, 2010 Stuffed grape leaves 2 cups almost-cooked rice - I use brown jasmin 1 bunch chopped scallions Grape leaves ~ 36 ½ cup Pine nuts ½ cup each chopped parsley and mint 1 cup diced Celery Lemon juice (1 large or 2 small) Lemon rind 2 tbsp Olive oil (optional: ½ cup cooked white beans – coarsely mashed) Salt to taste Sautee celery and scallions in olive oil, add pine nuts, rice, and optional white beans, stir until all is cooked and rice is warm. Turn heat off and add rest of ingredients (except for grape leaves). Wrap filling in grape leaves (like a spring roll) using two leaves if necessary. Steam 20-30 minutes and serve either warm or at room temperature. This is also really good served with a tomato sauce on the side. Where do I find grapeleaves and how do I use them? Like how do I secure them? Grape leaves can be found in most middle eastern stores.
