If it is baking there is a tonne of substitutes (I can send you a list if you like). If it's for eating (e.g., scrambled, egg salad, etc) there are ideas as well. For example: egg salad made from chickpeas or tofu, scrambled tofu, etc. I did see one site where you could buy what looked like a " real " fried egg but it had no egg product in it. I can't remember the site now. I am pretty sure the product was made somewhere in Asia. A lot of the faux me@ts I have purchased are from VietNam or Taiwan. Here is a cake that my kids, all 7 of them, have always loved even though they can have eggs with no problem. I used to make this cake for a friend's little girl's birthday....she could not have milk or eggs. This cake is easy and delicious and has been around at least 45 years. Even though it has a lot of sugar in it, remember you are not going to be making it everyday and serve small pieces.....you control the knife. Crazy Cake 3 cups flour 2 cups sugar 6 Tbsp. cocoa 2 tsp. baking soda 1 tsp. salt 12 Tbsp. oil 2 Tbsp. vinegar 2 cups water 2 tsp. vanilla Mix all dry ingredients in a 13 " by 9 " pan. Make three holes in the dry ingredients. First hole...pour in oil.....Second hole...pour vinegar.....Third hole....pour vanilla. Then pour water over all and stir until all dry and wet ingredients are incorporated well. Bake at 350 degrees for 35 to 45 minutes. Frost with any frosting you like or sprinkle with powdered sugar. For Spice Cake......leave out the cocoa and add 2 tsp. cinnamon, 1/2 tsp. ground cloves, 1/2 tsp. ground nutmeg and add 1/2 to 1 cup of raisins. Makes a nice moist cake that keeps well. Good luck....
