Guest guest Posted March 10, 2010 Report Share Posted March 10, 2010 Iron Skillet Cornbread and Sausage 2 eggs, slightly beaten 1 package Cornbread mix non-lard brand 1 (17 oz.) can creamed corn 1 cup buttermilk 1/4 cup oil 1 (8 oz.) package cream cheese, softened 2 cups Pepper Jack cheese, shredded 1 large onion, chopped couple veg sausages Combine first 6 ingredients in a bowl, and set aside. Cut up sausage and chopped onion and saute for a few minutes on a Tbls oil.. Pour half of cornbread mixture into a greased 10 1/2 inch cast iron skillet. Sprinkle evenly with sausage mixture and cheese. Pour remaining cornbread batter over top. Bake at 350 degrees for 50-60 minutes or until the top is golden brown.
