baked eggs: my new favorite

I picked up some fresh, free-range eggs from the lady I have bought eggs

from before, she advertised last summer on Craig's List. Her family keeps

chickens on their land (and these are some spoiled chickens!) We've had just

a few warm (almost 50 degrees F) days and already she says her dad has eggs

coming out of his ears. These eggs taste like nothing you've ever had from a

grocery store, they are wonderful.

 

Tonight I baked two of them in a small ramekin with some margarine. I added

salt and some chopped green onions when they were done, and oh my gosh, I

think this is my new favorite egg dish!! Easier than soft-boiled or fried

eggs. If you like runny yolks and have never had baked eggs, throw 1 tbsp of

butter or margarine in a small oven-proof dish, melt it, then crack 2 eggs

into it. Bake at 350 degrees F for about 15 minutes. The whites should be

cooked through but the yolks should still be runny.

My mom used to make me baked eggs by buttering one cup of a muffin pan,

buttering a piece of bread with the crust removed and then using it to line the

muffin cup, then breaking an egg into it and baking it until set.  I loved

having my egg and toast all-in-one, and I still make this now and then when I

need comfort food!

I'm having a group of teenagers and this sounds like a great idea. How long do

you bake it and at what temperature? Thank you.

That has been one of my favorite ways to cook eggs for a long time now....the

recipe is called shirred eggs. I have some special Pyrex dishes that were made

in the 1920's that are just for baking eggs...they are called " Shirred Egg

Dishes " . And, right now, I am getting between 35 to 46 eggs a day from my

hens so we have plenty of eggs to bake!!

Thank you! Because of flooding rain the girls will be coming next week, so I

have time to do a test run :>) Hope it is a pretty weekend so that the girls can

be outside. Also the farm across the street has mares ready to foal. Wouldn't

that be great to see!
