When I was young my Mom used to put a little butter in a small Pyrex dish, put the egg in and then put a piece of cheese on top and bake it. We had this many Friday nights for dinner. I love using my old kitchen glassware. Isn't it great to remember all of the comfort foods our mother's used to make for us? My mom was such a good cook, and I miss her so much, so when I make something she used to make, like baked egg custard, I FEEL her standing close by me with her arms around me. You don't have to have a Pyrex dish to duplicate this egg dish though.....you can use any glass or ceramic baking dish or even a small cast iron skillet.
