Hello All - I am new to the group.  Where I live, the only fresh vegetables

that I can eat in the long winter are parsnips, cabbage, cucumbers and carrots.

So, being a vegetarian is a challenge and I welcome help and ideas.

Thanks,

plspom

I buy the bags of frozen vegetables and supplement the locally grown vegetables

with that. A diced potato in with steamed frozen vegetables is really good, or

rice with stir fried frozen vegetables is another option. Spinach is a cold

weather crop and I can get that locally during the winter also. Turnip greens

are really good cooked with onion and garlic. Turnips are a cold weather crop

also.

Thanks, Michelle - I do use frozen veggies, but sometimes stores here turn off

the freezer to save energy and then turn it on again, so there's a quality

control problem.  I will try the rice.  No turnips where I am and spinach only

frozen.

Do you mean you are growing these vegetables? Or your local stores only carry

these vegetables?

I wonder if you can set up a sheltered growing area (like a cold frame) if you

want to grow vegetables.

If you search on localharvest website you may find a grower near you that has

different produce for sale even in winter. The CSA that I work at has 4 hoop

houses so they can offer turnips (and greens), spinach, carrots, onions, garlic,

beets, ginger and some other cold hardy greens.
