Rice with Collard Greens - not so much of a recipe as an interesting discovery

Ya'll need to drink the pot likker, too. That's the lovely broth resultant from

cooking collard greens. If you don't want to swill the pot likker down, dip your

cornbread in it. (North of the Mason Dixon line, it is called pot liquor or

broth.)

 

NOT eating cornbread with collard greens? *swoons in horror* Obviously my job

here is not yet done.

PS: remember Jiffy cornbread is made with lard. Lard is made from rendered pig

fat. Read labels.

Actually, that's the best part.... if you include it in the spoonfuls you plop

down on the rice, it helps during the re-heating to fluff the rice!

 

And, you're right.  It's just about the best part!

Pot likker is the best! I once was getting a bad case of bronchitis. I made

up a mess of greens, and drank the pot likker. Next morning, I was cured :)
