It's fast, cheap, healthy - what's not to love, right? My usual way is with sliced banana or cubed pears, walnuts or pecans, and real maple syrup. My husband likes fruit, nuts and brown sugar. Here's a link to a recipe for pumpkin pie oatmeal. I'm going to use it as a starting point and goof around with it tomorrow and report back. Here's how I do it: Bring 5 oz vanilla almond milk to a simmer. Add 2/3 cup of old fashioned oats and 1 cup frozen mixed berries (raspberries are my fav). Cook, stirring, until liquid is absorbed about 5 minutes. Enjoy! Mmmm...even my daughter (who is not vegan, but is contemplating vegetarian) has started to use almond milk to make HER oatmeal (generally with a bit of brown sugar, nuts, and dried cranberries). Guest guest Posted March 15, 2010 Report Share Posted March 15, 2010 Great idea to used mixed berries. I love raspberries too and I have some in the frezzer. I use water and oats in the pot at the same time (cold) and then bring it all to the boil together. I think they are creamier that way. I use 3/4 c. old fashioned oats, 1 1/2 c. cold water (I like a big bowl of oatmeal!). I'm going to try it with coconut milk tomorrow with the berries. God only knows when I'll get the darn pumpkin. Guest guest Posted March 16, 2010 Report Share Posted March 16, 2010 I heat the almond milk first because I don't like slimy/gooey oatmeal. :^) Using milk instead of water makes them taste creamy without the slime factor that bugs me.
