Rice with Collard Greens - not so much of a recipe as an interesting discovery

Last year, I found this bag of rice called " multi-grain " rice in an Asian food

mart here in Indianapolis.  It has unprocessed rice and other grains in it.  You

soak it about an hour or so prior to cooking and it takes quite a while longer

to cook that " regular " white rice.  I love the nutty flavor and textures.  I

usually cook up about 2 cups (pre-soak measurement) of that rice and refrigerate

it.  I then re-heat it for snacks.

 

Yesterday, I took some collard greens we had cooked in some vegetable stock that

were left overs and scooped a good couple spoonfuls over the rice, heated it in

the microwave and was quite impressed!  It was delicious.  I bet it would be

great with other greens too.  It was an interesting, tasty, discovery.
