Enjoy, Judy Celery Soup 2 T. butter or Smart Balance Light with Flax Seed Oil 4 c. celery, chopped 1 onion, diced 6 garlic cloves sliced 2 large potatoes, peeled and diced Melt oil butter in a large pot. Add the remaining ingredients and saute for about 6 minutes, stirring occasionally. 5 c. water 3 T. McKays " chicken-Style " seasoning - (all vegetarian powdered seasoning) 1 T. salt or to taste 1 - 12 oz. can of evaporated milk 2 T. corn starch Add water, salt and McKays Seasoning to the sauted veggie mixture. Boil until the veggies are tender, about 5 minutes. Pour into a blender or Vita-mixture and puree. Pour back into the pot. Add the milk and cornstarch in the blender or blender to mix well. Pour into veggie soup. Cook about 4 -5 minutes until soup is thickened slightly. McKays Seasonings are wonderful.
