I've adapted one thing from him. I eat very little tofu, but I usually have some in the freezer. I take a block and slice it (my dad cuts it horizontally in thirds - like cutting a cake into layers - I don't eat that large of a portion, so I cut mine vertically into 1/2 " slices), lay it between paper toweling, then terrycloth toweling and put a weight on it for about 30 minutes. Then I slip it into a Ziploc bag and freeze it. When I fix a meat meal for my family and there'll be nothing appropriate for me, I'll pull out a frozen piece and marinate it and bake/saute it. It is a quick meal when I need it. Loving the recipes on this list. I'm sure you will find some great ones, too!
