It took very little time to make these. I used a mandolin to dice the onions and cucumbers. To find this recipe and other Falafel Recipes in our files, Go to Files on the side bar of our homepage. Next click on " Beans and Loaves " and then click on the subfolder of " Falafels " . %2ARecipes/Beans%20%20%26%2\ 0Legumes%20%28as%20main%20ingredient%29%20Hummus%20Recipes/Falafels/ Enjoy, Judy Falafel Patties and Cucumber Sauce Cucumber Sauce Make this first so the flavor will have time to combine better. 3/4 c.(6 oz. cup) of plain Yogurt 1/2 cucumber, peeled & finely chopped ( I used 1/3 of a European long cucumber that you find shrink wrapped and didn't peel it) 1 t. dried dill weed 1 T. Veganaise or Mayonnaise Salt to taste Tony Chachere's Creole seasoning to taste(optional) In a small bowl combine all of the above ingredients. Falafel Patties 1 onion, diced 1/2 c. fresh parsley 1/4 c. cilantro(optional) 2 garlic cloves, minced 1 egg 2 t. ground cumin 1 t. ground coriander 1 t. lemon juice 1 t. salt 1 pinch of ground cayenne pepper 1 t. baking powder 1 T. Olive Oil 1 (15 oz) can Chickpeas/Garbanzos, drained 1 c. Italian or Reg. Dry Bread Crumbs (I used Italian style) Oil for frying In a food processor add all of the ingredients except the Chickpeas and bread crumbs. Blend until smooth. Add Chickpeas into the food processor and process until the chickpeas are in fine pieces. Pour this mixture into a med. size bowl. Add enough Bread Crumbs to the mixture to make it like a stiff paste. Mix well. Form the patties into the desired shape with your hands. Round for using in a burger bun or rectangular to use in a half of a pita pocket. Drop into hot oil in a frying pan. The oil should just cover the bottom of the pan. Brown the patty on both sides. We ate this in a half of a round pita pocket, that I toasted in the toaster. Add the Falafel patty, thin green pepper slice, alfalfa sprouts and then spoon in the cucumber sauce. You could also serve these on Whole Wheat Hamburger buns, with tomato, green pepper and onion slices, a lettuce leaf and the Cucumber sauce spooned on top and then covered with the lid of the bun.
