I put some leftovers in tupperware containers for my husband to take to work the next day. He loves it and know he has something good to eat. Sure is a lot cheaper than eating in their cafeteria. Those at home for lunch the next day, eat the remainder. Most days I only have to make up 2 meals a day this way. Aren't microwaves wonderful for heating up leftovers, when you are ready to eat and you don't have to dirty up lots of pots and pans to do it. Each person just dishes up the leftovers they want on their plate and pop it into the microwave, covered by another dinner plate, while reheating. I almost always have tossed salad made up in the refrigerator and lots of fresh fruit and veggie for a light lunch. Tonight we had homemade Chili, served with Soup/Oyster Crackers, and lemony coleslaw. I've already the hubby's lunch in containers for him. One has Chili, one has sour cream and shredded cheese to stir into his chili, and coleslaw in another container. He keeps a mug at work to heat up soups and chili's in that I send him. I looked in the files, but didn't see anything that seemed right. Thanks for any help. Guest guest Posted March 19, 2010 Report Share Posted March 19, 2010 Leftovers from dinner, but sometimes that is not enough. Today this will be snow peas and also sauteed pak choi. However, after walking 5 miles to and from work plus a couple of miles internally, I need my carbs! Easily solved with a peanut butter (from trader joes) and marmalade (our own yummy...) with TJ toasted cracked wheat sourdough bread. I eat a lot of food for lunch. Yesterday it was cauliflower leaves (like kale or collard leaves) frittata with a bowl of crowder peas. Peanut butter and marmalade sandwich as well, plus a banana. Some nice PG tips (tea) to wash it all down with too. Did I say I eat a lot for lunch? So then I have to have a snack at 4pm or I'll pass out from hunger before I get out of here. I bring various things to work, the instant Nile spice soups (lentil is nice, leek potato is nice, stay away from the minestrone), sometimes I eat a bowl of instant oatmeal, sometimes I bring a bag of assorted nuts.
