Lemony Coleslaw A favorite Coleslaw recipe that we love is. 1/4 of a large head of Green Cabbage, cut up small(I use my bonner Mandolin) 1 carrot, shredded( I use a bonner mandolin to make tiny matchstick size pieces) 1/4 c. Sugar(I like to use powdered because it dissolves faster) 1/4 c. Lemon Juice Mix the sugar and lemon juice together and mix well. Toss with the Cabbage and shredded carrots. I love the sweetness of raw cabbage and often add some shredded purple cabbage to this recipe. It adds a third color and is full of antioxidants. Guest guest Posted March 19, 2010 Report Share Posted March 19, 2010 I am so glad you posted this, Judy! You have given me a solid reason to plant another cultivar of cabbage in the garden. If I sliced some of our cooked golden beets (provided Carl doesn't eat every one of them almost as soon as the soil is rinsed off) and marinated them in this, do you think it would be good? My stomach thinks it would be, but then its beets and Carl added yet ANOTHER cultivar of beets to the garden last night. I'm betting the sweet and sour of the lemon and sugar would compliment the sweet of the beets and it would be awesome in a salad. Hmm...I could cook the golden beets in the lemon mixture, too. Maybe add a few curls of lemon peel for garnish. Must stop reading veg group list when hungry. Drats, I drooled on the keyboard again.
