Jeanne,

Well, what are you mumbling about when YOU live in the land of collard greens,

blackeyed peas, sweet potatoes and gardens-in-the-winter while up HERE it's the

first day of spring and they are now predicting SNOW????

 

Your gardening plans are something to envy!!

 

Seriously, I hope you find something truly " divine " to have for lunch today

(Saturday). MY cool stuff's all gone now and I am making a pot of

cooked dry " Christmas Lima Beans " that I found yesterday when my husband and I

met his parents for lunch.

 

Well, actually I didn't find THESE beans at " lunch " . After the folks went back

to their home (They drove an hour and a half; we drove 2 hours to meet kinda

half-way for lunch and a time to " visit " ), WE went to the mall to walk a couple

of hours, then to a little shop to buy some tea and THEN to a favorite health

food store--to get some " take-home food " .

 

I found some of my favorite extra-firm organic tofu (comes in 20-oz packages and

I can't get it anyplace near home)--bought 3 of those. Also found (cheaper)some

aeseptic silken organic tofu boxes--got 3 or 4 of those, too. (Told my husband,

" THESE are the 'cream' for your soups! " )

 

In the bulk bins, they had these beautiful LARGE, red-striped lima beans--as big

as " butter beans " , which I can't find easily around here. I got a LARGE bag of

these beauties, and another large bag of organic cannellini white beans.

(Cannellini are some of my favorite kinds of beans--can't find them too easily

where we live, either.)

 

Finally, I also got a large bag from the bulk bins of " dehydrated soup veggies " .

Those are wonderful to have on hand in the pantry. It's a whole bunch of

different vegetables, dehydrated and mixed all together.

If you put them into a soup pot of boiling water, they re-hydrate and make a

nice mix of vegetables and flavors. If you grind them up in a blender,

coffee-grinder or whatever, you can get a powder that makes a good veg. broth!

I now have a LOT of the stuff to keep to add to various things I make.

 

So, our trip to " see the folks for lunch " , which I was kinda dreading, yielded a

lot of new " goodies " for my pantry shelves and some nice tofu that I can fix up

into something good later from the fridge. (I have kept this extra-firm tofu for

a LONG time in the fridge in its sealed plastic shrink-bag, and it also freezes

in the bag very well.) DH doesn't like tofu, but that's ok...I have plans to

sneak it in some foods so he will be eating it at sometime in future...

 

Today, " what's for lunch " is up in the air. I haven't cooked any beans yet.

They are going into the pot soon, though. We'll likely have something with

beans and rice and veggies for tomorrow's lunch, anyway.

I've got cabbage and potatoes and carrots and onions set aside...MMMM!

I'm thinking, I'm thinking!

*goes kitchenward mumbling something about being stuck with a bowl of cream of

wheat, vanilla and dried cranberries whilst SOME of us eat a pot of Divine

Inspiration.*
