Maybe a fruit based salsa as a twist from the normal everyday salsas? I'm

pretty sure there were some posted in the past and should be in the files as

well.

Roasted Tomatillo Salsa

 

10 Tomatillos, halved, washed and husks removed

4 cloves Garlic, peeled

3 Jalapenos, halved, seeds and veins removed 

1 Med Onion, quartered

1/2 Bunch Cilantro

1 Tb Soy Sauce

1 Tb Orange Juice

2 Te Mexican Hot Sauce (I use Tapatio)

Salt to taste

 

 

Control the heat of this recipe by not removing seeds and veins from some or all

of the jalapenos.

 

In a 400 degree oven roast first four ingredients until burned spots appear and

tomatillos release juice, about 10 minutes.

 

When roasted place all ingredients, except salt, into a food processor and whiz

away. When the consistency of a bottled salsa has been achieved add a bit of

salt and taste. It might take up to 2 teaspoons of salt to taste 'right'.

Wow, such good ideas! I have one now - thinking of making Donna's

Mexican Confetti Cactus Salad and calling it salsa - I eat it with

chips for a meal all of the time -it has corn and black beans and

nopales... will have to re-post that one, it is my favorite side dish

(or sometimes, meal!)
