Guest guest Posted March 26, 2010 Report Share Posted March 26, 2010 Roasted Tomatillo Salsa 10 Tomatillos, halved, washed and husks removed 4 cloves Garlic, peeled 3 Jalapenos, halved, seeds and veins removed 1 Med Onion, quartered 1/2 Bunch Cilantro 1 Tb Soy Sauce 1 Tb Orange Juice 2 Te Mexican Hot Sauce (I use Tapatio) Salt to taste Control the heat of this recipe by not removing seeds and veins from some or all of the jalapenos. In a 400 degree oven roast first four ingredients until burned spots appear and tomatillos release juice, about 10 minutes. When roasted place all ingredients, except salt, into a food processor and whiz away. When the consistency of a bottled salsa has been achieved add a bit of salt and taste. I have one now - thinking of making Donna's Mexican Confetti Cactus Salad and calling it salsa - I eat it with chips for a meal all of the time -it has corn and black beans and nopales... will have to re-post that one, it is my favorite side dish (or sometimes, meal!)
