I have fallen in LOVE with all kinds of mushrooms and am curious as to ways y'all enjoy them best. I can't seem to get enough lately. lol Today I had them sauteed in olive oil with onions, garlic and green peppers. I used to eat them all the time in salad, then I was informed that they are poisonous to our system if not cooked. I haven't had a mushroom in salad for months now. I love stuffed mushrooms, sautéed, on pizza, pasta, egg omelet's, you name it, I'll eat it. I just wish I could have them in my salads again. My latest creation was making my own spring rolls with the rice wrappers and stuffing it with spicy peanut tofu, mushrooms, cilantro and spinich and a spicy peanut sauce. Oh and soba noodles. I'll have mushrooms with scrambled eggs or do a quick stirfy of mushroms, bell peppers, tofu and soba noodles with soy sauce and sesame oil and Sriracha sauce. As for the portabello as a burger, that was the first way I had mushrooms besides salad. It is fantastic! If that were true, wouldn't they have to be removed from every salad bar and from every restaurant menu salad and from all the places raw ones are sold--and have disclaimers saying something about " safety precautions " for eating raw, un-cooked mushrooms? Eggs, yes, I can see that is true for eggs. Some would argue that even un-pasturized (raw) milk is ok, though MOST public health departments (or is it the USDA now?) will do the same thing and restrict the public's access to purchase of un-pasturized " dairy " milk. It would SURELY trigger a huge " public health " outcry if mushrooms are so dangerous that they must be cooked or become a health hazard. I do think that there may be some truth in the warning you heard, however. Mushrooms are usually cultivated from a compost material, which, theoretically, could be full of all kinds of " germs " that would cling to the 'shrooms. Simple washing and cleaning is what is called for with mushrooms, and they ARE very delicate, so one can't " sterilize " them just by a rinsing off. Cooking WOULD " kill the germs " effectively. On the other hand, most people have a digestive system that CAN handle a few " normal " germs. Not super-germs, of course, but bacteria DO reside in our digestive tract and we couldn't digest most foods without them! A person who has problems with immunity MIGHT need to be very careful and avoid such things as raw mushrooms, I suppose. My sister, who has problems with candida yeast in her body, has to watch what she eats and sometimes mushrooms do trigger her candida symptoms, since they are " fungi " . If someone else on this board has some good information about this topic, I would be interested to hear it. I don't avoid raw mushrooms and, really, because I LOVE them, I SLATHER them frequently on LOTS of foods, rarely bothering to cook them. If I eat WAY too many, I get a brassy taste in my mouth--I think it's because mushrooms have a lot of zinc and I reach a saturation level of zinc in my body--thus the metallic taste. It goes away if I leave off mushrooms for a week or so! I rarely ever get sick, BTW. As far as I know, I've never had any other " bad " reaction to all the mushrooms I've eaten. A question: Was it about ALL mushrooms that you were told this or just a certain variety? I am curious about this topic--thanks for posting! Good wishes to you today! Personally, I don't think they have much taste unless they are sauteed a little, but I don't mind them raw.
