I removed the stem and take a teaspoon and scoop out the gills but you can eat the gills if you like. I brush with a mixture of olive oil, garlic, teriyaki and soy sauce. I like mine with vegenaise and fresh spinach -yum! Be careful not to overcook your mushroom or it will be dry. Just cook or grill until the juices start to seep out, then eat.
