Guest guest Posted March 29, 2010 Report Share Posted March 29, 2010 Grilled Potatoes and Mushrooms 6 to 8 small potatoes, cut into 1/2 inch slices 1 lb. button mushroom caps, stems removed 1 to 3 cloves garlic, finely chopped 1/3 cup olive oil 1/4 cup chopped fresh thyme 1 tsp. paprika salt and freshly ground pepper to taste Toss all ingredients in a mixing bowl to combine thoroughly. Grill over hot coals until tender and golden brown, turning once halfway through cooking. The potatoes will take about 8 minutes per side, the mushrooms about 5 minutes per side. Yields 4 servings.
