Guest guest Posted March 29, 2010 Report Share Posted March 29, 2010 Baked Mixed Rice 2 Tbls. butter or margarine 1 onion, chopped 1/2- 1 cup green pepper, optional 2 cloves garlic, minced 1 cup long-grain rice 1 cup long-grain brown rice 4 cups broth 1 Bay leaf (optional) Preheat oven to 350 degrees. Melt butter and saute' onion and green pepper until tender. Add minced garlic and stir till fragrant, about 2 minutes. Add both rices and stir 2-3 minutes. add broth and bay leaf, if used. Bring to a boil. Pour into a 3 quart casserole, cover well, and place in oven. Bake at 350 degrees for 35 minutes. Remove from oven, allow to set for 5 minutes, then fluff with fork before serving. You can add a cup of chopped fresh mushrooms to saute' with the other vegetables, if so desired. This recipe can be halved and baked in a 1 1/2 quart casserole. Follow same directions.
