I'm a morning person so I take time to prepare my first meal making sure I have most of the needd nutrients. I start with a cup of hot Green Tea and then always eat a large spoonful of raisins,coconut and mixed nuts. Don't think that you have to eat traditional breakfast food. Soup, pasta, rice, beans, you name it are perfect to start the day. Lots of energy protein. I often eat lunch leftovers. A favorite of mine is a one skillet meal of fried organic potatoes with scrambled eggs. I just move the potatoes aside in the skillet , top with shreaded Monterey Jack Cheese and scramble the eggs on the other side. Sometimes I mix Nopalitos, onions and garlic with the eggs. A couple slices of tomatoes and I have not only a beautiful looking meal but a nutritious one. The only thing missing is a piece of fruit which I might have later in the afternoon. I seldom if ever eat anything after 4 PM. Guest guest Posted November 23, 2009 Report Share Posted November 23, 2009 How about corn and rice? I often will have a couple of leftover corn muffins or corn pancakes. Hash browns (we do them with onions and peppers) are nice and filling and you can make 2X the recipe and reheat another day. Pizza - contrary to what my late mother said, it can be nutritious. You can make the crust from whatever grain your body can handle, or even just a pie plate filled with your favorite pizza toppings and cheese. You won't be able to pick it up with your fingers but it is very filling. Rice makes a good breakfast food. Sometimes I'll make a rice pudding with raisins and nuts and have that for breakfast as well as a dessert. You can make it with white sugar, brown sugar, honey, molasses or non-sugar sweetener. A bowl of rice with some cooked veggies mixed in is a lovely meal any time of day. If you miss oatmeal or cream of wheat, there is a rice cereal on the baby foods aisle that is good, even if it does look like library paste. If you're having problem getting enough protein and can/will eat dairy, there are a number of good (meaning high in protein, low in carbs and tasting good) whey protein powders you can use to supplement your diet. The soy ones would probably bloat you very badly. I can handle soy in TVP but not the soy protein drinks. If you can eat corn and will eat eggs, scramble a couple of eggs, add some cooked veggies and roll up in a warmed corn tortilla. Corn tortilla with heated refried beans and salsa is good. Oh lord, where are my brains? Grits. Not the canned hominy grits stuff, but corn grits like we eat in the Southern USA. Good food, nice and filling. Hope this helps! I think Chex has some soy-free cereals, too. Several people on this list like smoothies and some add protein powder to them. I like a frozen banana shake. Then add dried fruit/chopped nuts, maybe some cinnamon, cardamom, seeds of choice (sunflowers, pumpkin seeds, sesame seeds, hemp). You could have almond milk, or rice milk. Not sure where you live and what grains, nuts and fruits are available for a good price, so shop around. I just recently visited my daughter and son-in-law and learned to like something " new " for breakfast. My daughter is not vegetarian, but she's learned to love any kind of " refried " beans and tortillas for a filling and INEXPENSIVE breakfast. My daughter can cook--not many things, but a little (she's learning, and has a husband who is a great, creative cook to show her things). She loves making " refried " black beans for their breakfasts. She's a nursing mom, so she never skips a meal and often has healthy snacks thru the day, as well. She uses canned black beans, only vegetable oil (canola is what they like) and seasonings such as onion (to taste), fresh garlic (sautee in the oil first a bit), and just a LITTLE seasonings--cumin, maybe fresh cilantro...and a " splash " of LIME JUICE. DD insists that the lime juice (fresh or bottled, doesn't matter) is what gives the best flavor! My daughter puts the beans in the blender and then adds them to the oil-onions-garlic and seasonings in a skillet to heat it all through. It doesn't take long, if the beans are pre-cooked or canned. No soy, oat, or barley in this. Use corn or flour tortillas (check the labels for ingredients) and see if it isn't a nice, filling breakfast! It's tasty and vegetarian! (Oh, I forgot also: you may add a bit of shredded cheese, if you like that, to the beans after they heat up...and/or some salsa of your choosing. Chopped-up avocado is great, too. I ate this for my own breakfast when I visited my daughter a couple of weeks ago and loved it.) I remember once as a kid we went to Dennys and I had no clue what hasbrowns were...all I could think of was what you get at McDonald & #39;s. My dad says oh you & #39;ll like them, don & #39;t worry about it. My order came and I was what is that? Big pile of shredded potatoes...not what I was expecting...have never liked them...never liked the McDonald & #39;s ones either. My dad got all bent out of shape cause I wouldn & #39;t eat them...even drowned in ketchup I couldn & #39;t do it. Guest guest Posted November 24, 2009 Report Share Posted November 24, 2009 One thing that I like for breakfast, especially in the colder weather, is to take some dried fruit, be it cranberries, raisins, blueberries or what not, toss it in a pan of water, bring it to a slow boil and add either cream of wheat or oatmeal once it's at a boil and serve with a little rice milk and just a pinch of brown sugar. The fruit gets brought back to life by being in the water from the get go and adds much more flavor to the hot cereal I'm having then adding it in at the end. They are wonderful rehydrated with onion powder and a pinch of thyme, then brown in a canola oil/butter combo. So much simpler than trying to grate potatoes by hand. All the work is done for you. Put in a blender , 1-raw green apple chopped up a bit, 1/2 cup raw old fashion oatmeal. 1 cup water or milk, we use soy milk, blend as much as you want to. Pour into bowls. Guest guest Posted November 25, 2009 Report Share Posted November 25, 2009 Many things I have read say that fruit is best eaten on an empty tummy, so I try to eat 2 pieces 30 min apart and after being awake for 1-2 hours. It took some training, but I could eat 3 pieces of fruit this way and then be ready for a salad at lunch, 30 min after my last piece of fruit I snacked on nuts until I got to this point. Toss it in the microwave with milk, a chopped up apple and a little brown sugar. I've been using Jonagolds, as they're kind of sweet but not too sweet. Guest guest Posted March 30, 2010 Report Share Posted March 30, 2010 Hello my name is Michael, and here is a quick tasty breakfast. 1 cup of porridge oats 1.25 cups of water small handful of raisins 2 tablespoons of low fat yoghurt Mix oats and water and raisins together, in a microwaveable dish, cook for a minute on high, take out and stir, put in and cook for another minute, then take out stir in yoghurt, and you have a fast healthy breakfast.
