Glad to hear you've discovered Planet Sub, they have tons of vegetarian options. I have a horrible time deciding what I want there -- good news is, everything is good! I'm trying to think of other places I like to eat... Chili's has a great black bean burger (it's also HUGE, but I do sometimes eat the whole thing!) I have recently discovered Thai food and it is very vegetarian-friendly. My favorite is Thai Place on 87th Street near Antioch in Lenexa, but the same owners have several restaurants around the city - one in the North land, too, I believe. If you are ever near the Plaza, there is a vegetarian restaurant I've never been to, but I'm told is good. It's in the basement of Unity Temple, called Eden Alley. If you're ever downtown, at 11th and Main there is a new place called Ingredient which has tons of veg options and is pretty good.
