Vegetarian Gravy 1 Tbsp. butter or margarine (use Earth Balance and make it vegan) 1 Tbsp. flour 1 minced shallot 1 14.5 oz. can veg broth or 2 cups homemae broth 1 Tbsp. dry white wine ( optional) or sub with white grape juice 1/2 tsp. pepper Melt butter, add flour and whisk 1 minute over medium heat. Add shallot and whisk 1 minute longer. Whisk in broth until smooth, then add wine and pepper. Simmer stirring occasionally until gravy coats the back of a spoon, about 5 minutes.
