Guest guest Posted April 1, 2010 Report Share Posted April 1, 2010 Oatmeal Raisin Cookies 1 1/4 cups flour 2/3 cup sugar or raw sugar 1 cup rolled oats (not instant) 1 cup shredded dried coconut 1/2 cup raisins or dried cranberries 1 Stick (1/2 cup) butter, margarine or Earth Balance-vegan 2 tablespoons corn syrup or molasses 1 teaspoon baking soda 1 Tablespoon boiling water Preheat oven to 325 degrees. Line a baking sheet with parchment paper or use Release non-stick aluminum foil. In a large bowl stir together the flour, sugar, oats, coconut and raisins. Make a well in the center. In a small saucepan melt the butter and syrup over a very low heat. In a small bowl dissolve the baking soda in the boiling water and add immediately to the butter mixture, stir to mix. Add the butter mixture to the flour mixture and mix thoroughly. Place tablespoons of the cookie dough on the prepared cookie sheet, space them 2 inches apart. Bake until lightly browned, 12-17 minutes. Cool for 2-3 minutes on the tray then trasfer to a wire rack to cool thoroughly.
