I experimented w/zesting oranges, limes, tangerines & grapefruit this year into many recipes to intensify flavor. Eureka. The rich/intense flavors infused from citrus fruit zests are amazing. You have to experiment w/your own tastes, but lemon zest is delicious w/tomato and great with pasta. Tangerine zest is fantastic w/rice pudding/raisins, grapefruit zest fantastic in salad dressings. Dry Toast/sesame seeds, celery seeds, fennel seeds, cumin seeds or nuts for 10 minutes in any pan. Also try toasting slivered almonds, crushed walnuts. Then grind into a powder in a coffee grinder and stash in glass jars. Can be used in many recipes to replace salt & add rich flavors. Some like it hot: I love dry Thai chilis. Not so hot since they are dry. These can also be ground in a coffee grinder and kept in a jar & used instead of salt. P.S.
