Garbonzo beans steaming question & homemade bread

Do you stir the garbanzo beans during that 60 to 90 minutes of steaming? I

LOVE garbanzo beans! I usually just cook them in water like regular beans but

can't wait to try this. I have a very large, vintage steamer....probably made

between 1930 to 1950.....that is deep. That is why I wondered about if

stirring the ones on the bottom to the top would help them all steam more

evenly.

 

By the way.....I found the " Sandwich Rounds " at the grocery store on Sunday

and used one yesterday for lunch. Boy, these things are really good. Now if

I can figure out how to make them myself, I will be a very happy baker.

 

I have been making whole grain artisan bread from two new bread cookbooks I

bought..... " Artisan Bread in Five Minutes a Day " and " Healthy Artisan Breads in

Five Minutes a Day " by Jeff Hertzberg and Zoe Francois. This bread is really

good and does not require a mixer of any kind. Very easy to do also. You make

enough dough to make 3 or 4 loaves of bread (which only takes a few

minutes)....and all depending on the ingredients, you keep it in the fridge for

7 to 14 days, cutting off pieces in one pound hunks and forming that amount into

a loaf.....takes just a few minutes to form the loaf....then let it rise and

bake.....could not be easier. I have been making our bread, all of the time,

since 1981 using my Bosch Universal and wasn't sure how this would work but it

is as easy as they say it is in the books. I have always made between 4 and 6

loaves at a time (now only two since there are just two of us) but I have never

been THAT crazy about freezing bread.....since I discovered these books, I am

only making one loaf at a time......I did hear my Bosch downstairs, crying the

other night though....poor Bosch.

 

The Master Recipe for whole wheat bread reminds me a lot of these Sandwich

Rounds and I LOVE adding seeds to the top of the loaves.....yum.....and you can

slice it very thin. Thought I would mention these books for anyone who might

be interested in making homemade bread but who also is gone during the day and

who also does not have bread kneading stand mixer.

Nancy, those books sound terrific. Could I talk you into sending one

complete recipe to the list?? I will have to order the books. I love bread

that is made in my kitchen!!

Hi.....

I wouldn't mind at all posting a recipe......the only thing is that the

technique to make the bread is really needed and that is pages and pages. I

could give a short synopsis of the basic, general directions and then a recipe,

if that would be ok.

 

I found copies on ebay and got them a lot cheaper than the list price for

them....and they are both worth it.

I haven't bought much store bought bread in the last 40+ years and am always

interested in trying to figure out how to make some new commercial bread. There

is almost always a way to do that. I will have to work on this one asap. I

fell in love with making homemade breads when I was a 15 year old high school

Home Ec student and have never fallen out of love with it. I make yeast breads

of all kinds, quick breads and especially love to make crackers. I have

several sourdough starters, one I have had going for 37 years now that is almost

150 years old. My 7 children hardly knew what " store " bread tasted like during

their growing up years. I don't think I will ever fall out of love with

baking.

I hope someone will try it. It is really good and so very easy. There

are many, many recipes in both books. This was just what they called a Master

Recipe.

I have used this recipe, which just happens to be on the internet, several

times and it gives very good results and is very easy.

Give them a try.....you will LOVE homemade crackers. That old saying about

" not being able to eat just one " was really said about homemade crackers....not

store bought potato chips!!

Thanks. This looks like nice starter recipe. I hate paying store prices

for crackers. They are outrageous.
