Since we try to eat local, we don't always have salad greens available, but when they are, they usually end up on a sandwich with other bits of happiness. My Mom called yesterday for some ideas for feeding our family when we go visit next week and she was very concerned about the lack of variety that was in her cookbook. She wanted to make something special instead of the " tofu and salads you guys normally eat " (how ironic) I had to explain to her that we rarely eat tofu and a salad would be a real treat since we hadn't had a good one in a month or so. She asked with that " Mom-tone " in her voice what we were having for dinner- " because the kids need to have a good balanced diet and who wants to eat the same things over and over again? " -Well Mom most of America eats the same things over and over again. (of course I did not dare say that to her, but I can be brave here- she'll never know! Hey, if any of you guys know my Mom- you did not just read that!) She was surprised to hear that the menu included: Acorn Squash halved and stuffed with bar-b-que beans peppers and onions, fresh applesauce-with a little pear thrown in, and sauteed corn. We had iced green tea with peach nectar to drink. We enjoy a very rich culinary tapestry that seldom includes tofu and ordinary salads I am glad that my Mom was able to see that for herself my menu passed her " inspection " and I was able to turn her on to some new recipe ideas at the same time. ---- Just wondering how many other Vegetarians and Vegans are enjoying all of the wonderful recipes and ideas in our group, and who hardly ever eat Tofu or salad. > > Life is just way too much fun sometimes > Sending smiles and hugs your way > Deanna in Colorado > also at recycled_gardens > Quote Link to comment Share on other sites More sharing options...

I don't eat salad, cause I can't stand the taste of cold vegetables at dinner, and I don't like it.I've been vegetarian, in a serious form, since Sepetember 5th,and I already here, " Tofu and salad are all you can eat. " Well,I've only eaten tofu once in the last month. My meals are tasteful. I'm ordering a tofurky, which is tofu. I also hear, " There's no variety, " which baffled me so much,that I did a blog on the variety of produce, vs. the vareity of meat at Hy-Vee. there's over 250,000 vegetables and produce items (this I found on a website.) With MOrningstar, Boca, and Amy's and other's that totally opens the door. I found, after posting here, imitation crab meat.I'll check on that at the store today.
