Guest guest Posted April 6, 2010 Report Share Posted April 6, 2010 Herbed tofu cubes I lb firm tofu, cut into 1 cm cubes Marinade: 1/2 cup meyers lemon juice (if you use Eureka lemons, reduce amount and use more wine) 1 tbs lemon zest 1/2 cup white wine 1/2 head garlic (about 5-6 cloves), minced 1 tbs minced fresh rosemary 1/4 cup minced fresh cilantro 2 tbs minced fresh oregano 2 tbs minced fresh marjoram 3 tbs honey Mix ingredients together. I got at it with an immersion blender to pulverize herbs/garlic a bit more. Soak in marinade a couple of hours or overnight. Sautee tofu cubes in a large cast iron skillet in a little olive oil. I use the slotted spatulas to separate the cubes from marinade and stir the cubes. Cook for 15 minutes or until some of the cube sides get nice golden brown.
