Sandwich Thins

I picked up a package of the sandwich thins. They are 100 calories for the

top and bottom combined. They smell good and look good. I picked up some

portabella mushrooms and some beautiful green leaf lettuce. I have tomatoes

and cheese here. I will have a sandwich for supper. They do look like

something good to me.

That's what I had for supper: a nice cheddar and avocado on homemade 7

grain bread. It wasn't what I had planned but I got too lazy to finish

my Spelt and Greens (kale, spinach and parsley,sauteed with onions,

garlic and carrots) dish. The spelt is cooked, at least, so I'll have a

head start on tomorrow's supper. But it's easy to get sidetracked with

you've got a ripe avocado sitting right there grinning at you.

And they do grin at you!!! So do portabella mushrooms!! I love the

sandwich thins as you can taste the fillings much more.

If you don't surrender immediately, they begin to leer. I can't wait to

try sandwich thins. I'll have a buy a loaf rather than wait for a

recipe.

That is my favorite go-to summer dinner, and great for picnics =)
