Guest guest Posted April 8, 2010 Report Share Posted April 8, 2010 Mindy, what a great thing to do! One chapter I'd suggest is more of a chart like what to substitute to make a dish vegan friendly. Like soy or nut milk in place of real milk. Maybe they could be little tips put at the end of a recipe or chapter in a little box. I'd add a chapter just on beans. There seems to be a number of vegetarians who have difficulty using beans at first. Also there isn't a huge number of different kinds of beans in the grocery stores in some areas. Down here I can find black beans, pintos, kidney, Great Northern and navy beans in dry form - that's it! I can find split green peas. So the desperate to be vegan (or veggie's mom, wife, hugsband, significant whatever), can have some ideas of yummy dishes to cook which the entire family would like. Oddly enough - desserts. I can make the heck out of desserts however we're lacto-ovo vegetarians. Other than fruit I'd be totally lost as to what to give Donna, for example, since I know she is a vegan vegetarian. We're ok with eggs and milk since we actually know the girls they came from and know the conditions they live in. We know most of their names, too, but darned if I can tell one Rhode Island Red from another. Main dishes and side dishes. Sounds silly but at first I had a dickens of a time figuring out what to serve as a side veggie dish. After all, the main dish had or was veggies, so what do you serve? Breakfasts. Easy if you eat eggs but...What do you do for protein if you don't eat eggs? There are only so many times you can eat the same old same old dry cereal with your choice of non-moo liquid.
